VR Preview only shows left eye,

Self explanatory, happens with the stock VR Player component.

The preview, meaning the render that appears on the desktop window? It's only supposed to show a single eye because a stereo image looks confusing without a headset.

Do other games do this, or do they make a third camera in the center of the eyes and project that result?

I don't know. Making three cameras would be extremely wasteful.

Maybe it might be worth considering drawing both eyes like you've done in Leadwerks 4 as you can better watch what's actually happen.
